The Caucasus region is considered to be the site of the ancient origins of wine production. Today, the countries in this region are of growing importance to the global wine economy. Many native grapes are grown in the area and traditional winemaking techniques are of interest. In Georgia, one of these traditional winemaking practices is the use of large egg-shaped, clay fermentation and storage vessels called qvevri (see also image below).
